My wife was getting her hair done and I had caught up on some chores (mainly dishes) around the house. I was getting hungry and knew she would be hungry also, so I had to think about what to make. With it being the week after Thanksgiving, there was not a lot to choose from since so much cooking had been going on the previous week. I looked through the fridge and pantry and decided I would do a Spam Musabi Rice Bowl type of thing. As seen below:

I got to cooking but then realized I was missing ingredients for the Musabi sauce. I had also already started cooking and could not turn back. Serving some fried Spam slices with steams peas and corn on a bed of freshly cooked rice would not be the worst thing, but we needed something else.
I noticed some fond on the pan from the Spam. I saw a spare shallot on the counter. “Maybe this can make a sauce?” I finely chopped up half a shallot, tossed that in the pan to cook and soften, deglazed with a splash of wine, poured in some leftover chicken broth, brought to an intense simmer to reduce, then added a big knob of butter to thicken and make creamy. Ta-dah! Semi-decent sauce to the rescue…
…Musabi sauce still would have been better.
